Cooking steps

1

Rinse the toor dal in a few changes of water, then drain.

the rinsing water runs almost clear
2

Put the dal, water, turmeric and a little salt in a pressure cooker and close the lid.

3
Pressure-cook dal: 12 minMedium heat

Pressure-cook on medium heat for 4 whistles (about 12 minutes).

4
Pressure release: 10 min

Turn off the heat and let the pressure drop on its own before opening.

the pressure valve has dropped and no steam escapes
5

Mash the dal with a whisk or ladle, adding a little hot water if it is too thick.

the dal is completely soft with no firm grains and mashes smooth
If any grains are still firm, close the cooker and give it one or two more whistles.
6
Medium heat

Heat the ghee in a small pan for the tadka.

hot but not smoking
7
Cumin: 30 secMedium heat

Add the cumin seeds and let them sizzle.

they crackle and darken slightly
Keep your face back; the seeds can pop out of the hot ghee.
8
Sauté onion: 4 minMedium heat

Add the onion and green chillies and sauté.

the onion is soft and light golden
9
Fry garlic: 45 secMedium heat

Add the garlic and fry briefly, stirring.

Garlic burns fast and turns bitter; keep stirring.
10
Cook tomato: 3 minMedium heat

Add the tomato and cook, stirring.

the tomato is soft and pulpy
11

Pour the tadka over the dal and stir it in.

Pour slowly and stand back; hot ghee spits when it hits the dal.
